Cinnamon Roll Blondies - by Winnie

INGREDIENTS (small batch):Blondie:1 egg1/3 cup brown sugar1/3 cup granulated sugar1/2 cup butter, browned3/4 cup flour1/4 tsp baking powder Cinnamon sugar:4 tbsp light brown sugar2 tbsp granulated sugar1 tsp cinnamon

INGREDIENTS (small batch):
Blondie:
1 egg
1/3 cup brown sugar
1/3 cup granulated sugar
1/2 cup butter, browned
3/4 cup flour
1/4 tsp baking powder

Cinnamon sugar:
4 tbsp light brown sugar
2 tbsp granulated sugar
1 tsp cinnamon

DIRECTIONS:
1. Preheat your oven to 375F.
2. Brown 1/2 cup of butter - see my previous posts on how to make brown butter! You should end up with a little more than 1/3 cup of brown butter as some of the water evaporates during the cooking process.
3. Let the butter cool until warm to the touch, then pour into a large mixing bowl. Add the egg and sugars and mix. Make sure the butter is cool enough or else it’ll scramble the egg. Whisk everything together really well, until the sugar is fully dissolved and the egg turn a light pale color, about 5 minutes. This will create a meringue that helps give a crackly top on the blondie!
4. Then add the flour and baking powder. Mix just until no clumps of flour remain. 
5. Prepare the cinnamon sugar mixture by combining cinnamon, brown sugar, and granulated sugar. 
6. Spread half of the blondie mixture onto a small grease and lined baking tray. I used a 8”x4” pan. Evenly sprinkle on half of the cinnamon sugar mixture, then spread on the remaining half of the blondie mixture. Top with the remaining cinnamon sugar mixture.
7. Bake 23-28 min or until the top has set and a toothpick inserted in the middle comes out almost clean. The blondies should be set, but do not overbake!
8. Let the blondies cool completely before cutting and serving. Enjoy <3
